Times Square in New York City is a mad scene on a normal day. But just imagine the pandemonium slated to unfold early Thursday morning, when Emeril Lagasse will lead a pancake-making demonstration with more than 300 fans, all of whom will be clutching their own skillets and burners.

Lagasse is in town to promote his new TNT show, “On the Menu," which is slated to premiere Friday at 8 p.m. EST. Check back here tomorrow for our interview with the chef, in which we’ll hear what he’s been up to these days.

In the meantime, those not attending Thursday’s festivities can try out some of Lagasse’s buttermilk pancakes at home. You can even get creative and pipe the batter into intricate shapes like Mickey Mouse or The Beatles, or opt for the traditional route while avoiding these pancake pitfalls.

Makes 12 pancakes

2 cups sifted all-purpose flour
2 tsp. baking powder
tsp. baking soda
tsp. salt
2 Tbsp. sugar
1 egg, unbeaten
2 to 2 1/2 cups buttermilk
3 Tbsp. melted butter or vegetable oil

Mix and sift the dry ingredients into a mixing bowl. Combine the egg and 2 cups of the buttermilk; add the flour mixture and beat until smooth. Add the butter or oil and, if too thick, more of the buttermilk until the desired thickness is achieved. Bake on preheated griddle until golden brown.
