19 Ways To Eat More Strawberries This Summer

Nothing better than kicking back poolside (or beachside if you’re lucky) with a big bowl of fresh strawberries. Healthy, refreshing, and sweet, this in-season fruit goes seamlessly into a variety of meals.

Check out all the ways you can use a strawberry this summer:

1. Strawberry Peach Guacamole

Switch up your usual guac with some strawberry and peach.

Prep Time: 15 minutes
Cook Time: 0 minutes
Total Time: 15 minutes

Servings: 4-8

Ingredients:

3 avocados
1 cup chopped strawberries
2 peaches (peeled and chopped)
Juice from 1 lemon
Chopped fresh basil, 3-4 leaves or to taste
Salt and pepper to taste

Directions:

1.Peel and chop peaches, strawberries and basil
Tip: I found that using a knife to peel the peaches is a lot easier than a peeler, especially since you want softer, ripe peaches as opposed to hard ones.

2. Slice avocado and mash in a bowl with a fork

3. Mix in chopped fruit and basil

4. Mix in lemon juice

5. Add salt and pepper to taste

6. Grab some tortilla chips and enjoy!

5. Fruit Salsa

Take a dip this summer.

Prep Time: 30 minutes
Cook Time: 10 Minutes
Total Time: 40 Minutes

Servings: 5

Ingredients:

For the Cinnamon Crisps:
10 flour tortillas
Cooking spray
¼ cup granulated sugar
1 teaspoon cinnamon

For the Salsa:
2 apples (I used Granny Smith)
1 lb. strawberries
1 lb. raspberries
2 kiwis
Juice of 1 lemon
3 tablespoons raspberry preserves

Directions:

Make the Crisps:
1. Preheat oven to 350ºF.

2. Combine cinnamon and sugar in a small cup or bowl.

3. Spray both sides of each tortilla with cooking spray, and sprinkle cinnamon-sugar mixture on both sides.

4. Stack three tortillas together and cut into 8-10 triangle pieces. Separate the pieces from the stack and bake on baking sheet lined with foil for 8-11 minutes, until crisp. Let crisps cool before serving.

For the Fruit Dip:

1. Finely chop strawberries and peeled apples.

2. Combine chopped strawberries and apples into a medium bowl. Squeeze in the lemon juice and stir to combine.

3. Add kiwis, raspberries and preserves. Slightly break apart raspberries with your hands before adding to avoid whole raspberries in your salsa. Stir gently to combine all ingredients.

4. Let sit or chill for 15 minutes before serving.

5. Grab a cinnamon crisp and enjoy!
