‘Top Chef: The Dish with Kish’: Can Gregory Gourdet outdo Charly’s Creole sauce, and will they survive pickle ice cream? [WATCH]

Charly Pierre won the “Top Chef” Quickfire Challenge in “Supper Club” where the cheftestants were tasked with putting their own spin on a sauce recipe from groundbreaking chef Carson Gulley. Pierre made a Creole sauce with a Haitian twist. So for “The Dish with Kish,” host Kristen Kish invited another Haitian chef, “Top Chef” All-Star Gregory Gourdet, to make his own variations of Creole sauce. Watch the after show above.

Gourdet competed twice on “Top Chef.” He was the runner-up in season 12 in Boston and then returned for “Top Chef: All-Stars” in season 17 in Los Angeles, where he finished fifth. “Would you ever do it again?” Kish asks him. “One more time,” he answers. “I’ve got one more season in me. I’ll be, like, 60, but it’ll be great!” He starts his cooking process by mixing up an epis, a traditional Haitian blend of peppers, herbs, garlic and onion that is used as a seasoning base. He mixes that in with olive oil, chili pepper, tomato paste and some more onions and garlic to complete the basic Creole sauce. Then he blends that with caramelized onions for one variation and coconut milk for another variation.

“Top Chef: All-Stars” finalist and current culinary producer Stephanie Cmar decides to surprise them. Inspired by the “Supper Club” Elimination Challenge, she brings out a relish tray of snacks, but then, inspired by Milwaukee’s abundance of dairy and pickles, she brings in some bread and butter pickle ice cream. “I’ve never had pickle ice cream,” says Gourdet, to which she replies, “I’ve never made it until this little opportunity that I had!” Kish compares it to salted vanilla ice cream, but then they have the bright idea of adding one of Gourdet’s Creole sauce variations on top. Kish looks … confused when she tastes it. “It’s not …” Gourdet begins, trying to articulate what he just put in his mouth. “It’s not good,” Cmar finishes.
