ABOUT RESTAURANT INSPECTIONS

This is a snapshot of the inspections conducted by the Marion County health department.

Twice annually, licensed restaurants receive unannounced inspections that focus on food temperatures, food preparation practices, worker hygiene, dish-washing and sanitizing, and equipment and facility cleanliness.

Violations: Restaurant scores are based on a 100-point scale. Priority violations deduct 5 points, and priority foundation violations deduct 3 points. Violations recorded on consecutive inspections result in point deductions being doubled.

Scoring: Scores of 70 or higher are considered compliant. Restaurants scoring below 70 must be reinspected within 30 days or face closure or other administrative action. Restaurants display a placard by the entrance to indicate whether they have passed their last inspection.

The Tatted Bull #2

Location: 120 Detroit Ave. N, Detroit (mobile unit)

Priority violations:

A handwashing sink does not provide the minimum water temperature or is not equipped with a mixing valve or combination faucet, specifically: Water temperature measured 74 degrees Fahrenheit at the hand washing station; water heater not turned on at the start of the inspection. Point deduction: 3.

Temperature measuring devices are not provided or readily accessible for checking food temperatures, specifically: Unable to locate a food probe thermometer. Point deduction: 3.

La Espiga Bakery

Location: 183 S Main St., Jefferson

Date: Oct. 3

Score: 77

Priority violations:

A handwashing sink does not provide the minimum water temperature or is not equipped with a mixing valve or combination faucet, specifically: Hot water not dispensing at restroom handwashing sink. Hot water valve is broken. Water measures at 63 degrees Fahrenheit. Point deduction: 3.

Raw or ready-to eat food is not properly protected from cross contamination, specifically: Opened bag of raw fish stored over opened ready-to-eat bag of shredded cheese in prep table. Eggs stored over ready-to-eat salsa and milk in upright reach-in. Point deduction: 5.

Food-contact surfaces of equipment and utensils are not sanitized after cleaning, specifically: Chlorine bleach is not present in the facility during the time of the inspection. No other sanitizer present. Three compartment sink and wiping cloth buckets are not set-up. Point deduction: 5.

Refrigerated, ready-to-eat, potentially hazardous food has not been consumed within the required time period or is not properly date-marked, specifically: Various foods in the upright reach-in or prep table are missing dates or are past their seven-day disposition including: opened milk, cooked steak, cooked carnitas, opened raw fish, tomato sauce, opened cream cheese and prepared enchilada sauce (Sept. 26). Point deduction: 5.

Taco Del Mar

Location: 1920 Turner Road SE, Suite C, Salem

Date: Oct. 3

Score: 92

Priority violations:

Hand towels or a hand drying device is not provided at the handwashing sink, specifically: No paper towels at handwash sink at start of inspection. Point deduction: 3.

Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: Six containers of ready to eat beans, one container of rice, one package of cooked chicken, one package of cooked beef, one container of shrimp and two containers of diced tomatoes all measured 51 degrees Fahrenheit in walk-in cooler. Ambient air thermometer in walk-in cooler read 51 degrees. Point deduction: 5.

The premises is not maintained free of insects, rodents, and other pests, specifically: Many aggressive flies in mobile unit, multiple flies landing on paper towels for handwash sink, flies landing on clean utensils and crawling on countertops. Point deduction: 3.

Denny's

Location: 2919 Tom Tennant Drive, Woodburn

Date: Oct. 4

Score: 95

Priority violations:

Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: The pancake batter in the up-right refrigerator is 53 degrees Fahrenheit. Point deduction: 5.
