Come down to the "Jambalaya capital of the world" for their annual Jambalaya Festival. Similar in many ways to Spanish paella, the term "jambalaya" is derived from the Spanish jamon for ham. Jambalaya found its way into Creole cookery in the late 1700's where it soon took on the flavor of added local ingredients.

The 57th edition of the event will be held May 24-26 along S. Irma Blvd. in Gonzales. The festival also includes lots of music on three stages.
