Joey Graziadei popped the question to Kelsey Anderson on Monday's finale of 'The Bachelor' after his other finalist Daisy Kent decided to go home

Engagement Bliss

"We want to promise our lives together, but we don't want to rush it," Joey tells PEOPLE of planning his nuptials to Kelsey. "It's time now to enjoy this. We have the rest of our lives to celebrate it. We're going to take it day by day and just enjoy this time."

Wedding Plans

While Kelsey isn't sure what she wants their wedding to look like, there are a few details that she's certain of. "I definitely want all my close friends and family there," Kelsey tells PEOPLE. "I think I want a very timeless wedding, but where? Not sure. I guess we're going to have to figure that out."

A Long-Term Engagement

Kelsey thinks the couple will be engaged for two or three years.

Celebration Time

The pair wants to celebrate their engagement with a party this summer in New Orleans, where Kelsey currently resides.

The Perfect Ring

Joey proposed with an emerald-cut diamond ring designed by Bachelor Nation favorite Neil Lane. "I think it's stunning, and I never want to take it off again," Kelsey says.

Practice Makes Perfect

Joey tells PEOPLE he mentally practiced proposing many times, and there was only one hand he envisioned holding. "I didn't ever grab someone else's hand, I want that to be known. [Hers] was the only hand I ever grabbed," he says.

Heading to the Big Apple

The couple has plans to move to New York City by the end of the summer. "I've always wanted to live there and Joey is supporting me in that," Kelsey says. "We're young and I think now is the time to live in a tiny, cramped apartment together and experience it. Even if we hate it, at least we can say we did it."

Ready for Life Together

They also have plenty of other plans now that their engagement news is out in the world. Joey says he can’t wait to travel and “see the world” with Kelsey, “but then, also just be a normal couple because we haven't gotten a chance to do that yet, so a lot to look forward to." Meanwhile, Kelsey tells PEOPLE she's looking forward to the "little things" with her husband-to-be. "I'm just excited to do life together and just run to the store together," she says.
