A Peek Inside My Fridge, by Lindsay Ellingson

by Lindsay Ellingson

Welcome to my kitchen! This is the unedited glimpse of what you will find in my fridge—you may be a little surprised. I don’t pretend to eat healthy all the time—I do have my indulgences, but I keep my diet as organic and unprocessed as possible. When I’m not traveling I love to cook at home with my husband Sean. Many of my recipes have been handed down in my family from one generation to the next.

In My Fridge Door

Here’s a peek inside my fridge! If you look closely you will find a random mix of dips and drinks in my refrigerator door. From pure aloe to chocolate syrup, to kombucha and buffalo wing sauce, which is great with grilled chicken (instead of fried). I drink pure aloe mixed with water to keep my skin hydrated and I love drinking kombucha for the probiotic and enzyme benefits. The chocolate syrup is my husband’s, he has to drink chocolate milk with dessert, it’s pretty cute.

Juice

image

We are so spoiled in New York City with the convenience of cold pressed juice shops on almost every corner! Organic Avenue and Juice Press are two of my favorites that I stock my fridge with. I rely on green cold pressed juices on days when I haven’t squeezed in enough vegetables. For a quick boost of energy, I opt for a shot of E3 Live instead of coffee. It’s an incredible superfood that I take everyday, it’s packed with vitamins, minerals, chlorophyll, and essential fatty acids. Just have a chaser on hand because it tastes like a lake!

Skincare

A makeup artist recently recommended I store hydrating masks in my fridge. The cooling effect instantly wakes you up in the morning, like splashing cold water in your face, and also hydrates and tightens pores. I use Aloe Vera gel with my Nuface Trinity Facial Toning Device, instead of their gel primer, a few times a week. Not only am I getting a workout on my face, aloe is so soothing and helps with any skin irritation.

Avocado Toast

I’ve become obsessed with avocado toast recently. It’s so easy to make in the mornings and avocados are loaded with healthy fats, potassium, and fiber. I sprinkle a little sea salt and lime juice on top of with a dash of Cholula, my favorite hot sauce! (What’s your go-to breakfast?)

Fresh Fruit

image

We always have a bowl loaded with the freshest fruits of the season. Since I’m always on the go modeling and working on my cosmetic line, Wander Beauty, I subscribed to Quinciple, a weekly delivery service that provides the perfect balance of the freshest groceries and also comes with suggested recipes, which takes the guess work out of cooking after a long day of work. Another great option is to shop at your local farmers market every Sunday. I really enjoy that, especially now that spring has arrived!

In My Freezer

image

My new beauty find, which I keep in my freezer, is called Hansderma SkinCool Ice Roller. It’s a genius lymphatic drainage facial massager that instantly tightens pores and de-puffs. I use it before work, especially if I haven’t had enough sleep. And of course, what freezer would be complete without a little gelato?! I love Talenti’s Sea Salt Caramel flavor. The limited, premium ingredients, like coconut oil, make it seem like less of a splurge.

My Turkey Tacos

image

Sunday’s are usually reserved for taco night. It’s one of my few specialties. My mom made the most delicious tacos growing up. Her secret was to lightly fry corn tortillas in a little olive oil. (But don’t tell her I told you!) I like to put my own healthy spin on her recipe by using turkey instead of beef and loading it up with kale instead of iceberg lettuce. Finish it off with some vine-ripened tomatoes and a little raw sharp cheddar or vegan cheese and you will be in taco heaven. You can thank me later ;)

Cooking With Carly

image

My little cockapoo Carly loves to watch me cook. No matter what I’m making I always try to add a vegetable. Whether it’s kale on your tacos, steamed broccoli in pasta, or roasted Brussels sprouts with parmesan, there are so many ways to make veggies taste good. They’re essential to our skin health and packed with antioxidants that help to protect the skin from cellular damage caused by free radicals. Even Carly loves her vegetables. Her favorite treats are Green Juice from Bocce’s Bakery.
