Snoot Sandwiches Are a Sensation in Kansas City


In Kansas City, Mo., there’s a neighborhood hangout called The Tenderloin Grill. Sure, it’s known for its fried tenderloin sandwich, but it is famous for serving pig snoots on a bun. For generations, pig snoots were cheap food for working-class people in meatpacking towns like Kansas City because it was the part of the animal that no one else wanted. And when you take a look at the snoot sandwich, it’s easy to understand why.

Today, The Tenderloin Grill is a local institution where the local police bring rookie cops to eat snoot sandwiches as an initiation rite.Bizarre Foods host Andrew Zimmern dug into his snoot sandwich like rookie cop with gusto and described it as tasting a little like pot-roasted pork with a “latexy, vaseline kicker.” To achieve this texture, fresh pig snoots are pressure-cooked to tenderize. Once tenderized, they’re boiled till they’re beyond melting.
