The farm-to-table experience has become almost commonplace at high-end properties these days.

But, always looking to up the ante when it comes to pleasing guests, a number of establishments are taking this foodie movement to the next level. Rather than simply knowing where your ingredients are from, these 10 hotels are offering you the chance to go pick them fresh from nature to eat that night. Yes, ladies and gentlemen, this is forage-to-table.

Hotel Principe di Savoia, Milan, Italy

Truffles, the signature of decadence, since ancient times, are a staple of Northern Italian cuisine. Skilled farmers carefully harvest the rare delicacy at particular times of the year and only in certain locations. One of those spots happens to be outside of Milan, Italy where one palatial property in the city will take you on your own excursion to hunt for the hidden gems. Guests can go truffle hunting from October to November with a local expert and a trained dog to find the delectable mushrooms, explore the medieval castle of Roddi and then dine on a three-course truffle-themed lunch at Osteria dell'Arco. A truffle cooking class with the chef at Acanto Restaurant and wine pairing with Sommelier Michele Garbuio can also be arranged upon request.

Turkish cuisine is known for it’s strong spices and flavors, and learning the tricks of trade are key in either creating a masterpiece or disaster of a meal. This four-star hotel allows guests to visit the onsite garden and handpick fresh herbs and greens, which are then specially prepared for the Turkish meal that evening. If you wish to delve a little deeper, guests can visit local markets with the restaurant’s chefs, receive a crash course on the region’s produce and purchase items that they will prepare together a one-on-one culinary cooking experience.

Like our hunter-gatherer ancestors, you’re going to have to work for your food at this historic resort. Hiking boots are in order as you head into the Blue Ridge Mountains with a skilled guide from the company “No Taste Like Home” to gather edible wild plants, mushrooms and more. Unlike our distant relatives, you’ll head to a more civilized establishment, the Inn’s VUE 1913 restaurant, where your freshly picked “finds of the day” will be turned into incredibly innovative dishes.

You will not want to miss this hands-on adventure offered by this beachfront hotel in Abu Dhabi. Guests get to witness pearl harvesting first hand with the “Keep the Pearl” package where you’ll climb on board a traditional wooden dhow, participate in a guided tour of the water banks and hopefully shuck (and eat) your way to a pearl. Forget the pearls and grab some gloves because this two-day down and dirty culinary experience is for true shellfish aficionados. Captain William Saunders will take you along the Rappahannock River to learn how to harvest and sort the world-famous oysters before bringing them to a local shucking plant. After working up an appetite, you’ll head back to the hotel where Chef TV Flynn will cook up a delicious lunch featuring your morning’s catch. The next day, you will visit the Rappahannock River Oyster company where they will learn the history behind the area’s oysters followed by lunch at one of thelocal oyster bars, Merroir.
