“I make this recipe for Christmas and Easter holiday’s also if I’m entertaining.
I learned the recipe while working in an Italian regattas as a manager. The chef taught me how to make it and I added the whip cream on my own just as a twist. I like to change it up and put my own twist on certain things. If it works I use it.”

6 Egg Yolks
2 ½ cups of whipped cream homemade
1 pound of mascarpone cheese
11/2 cups of strong espresso (cooled)
2 teaspoons of dark rum
24 packaged ladyfingers
½ cup bittersweet chocolate for shavings (optional)
Or cocoa powder for dusting the top.

In a large bowl, using an electric mixer with a whisk attachment beat together the eggs and sugar until pale, about 5 minutes then add 1 tablespoon of espresso and mix thoroughly until combined.

In a shallow dish, add remaining espresso and rum. Dip each ladyfinger into espresso mixture for only a few seconds. Place soaked ladyfingers on the bottom of a 13x9 inch baking dish, breaking them if needed to cover bottom of pan.

Spread mascarpone mixture over the ladyfingers. Arrange another layer and top with the remaining mixture. Before serving, sprinkle with chocolate shavings or cocoa powder.
