There are some foods you never grow out of, and high up on that list is spaghetti and meatballs. We love it now as much as we did when we were eight. As fun as slurping noodles can be, there are better ways to serve the classic Italian dinner. Case in point: Spaghetti and Meatball Pie. Crazy? Sure. But in a comically fun and amazingly delicious way.
This isn't one of those spaghetti pies where the noodles are layered high. It's better - thanks to the crispy spaghetti crust. It make look lacy and intricate but is actually a breeze to make. Toss cooked spaghetti with an egg and some parm then press the pasta as compactly as you can into a pie plate and bake until golden.
While the crust is baking, sear some meatballs and simmer them in marinara for just a moment. Then, make a classic lasagna ricotta mixture. Spread the ricotta onto the baked noodle crust, top it with as many meatballs and cover it all with mozzarella. In the oven, the edges of the crust will get even crispier, the meatballs will cook through and the mozzarella will get bubbly and melty.
Trust me, the craziness of the pie, and all that it requires - making spaghetti and cooking meatballs - is totally worth it. But it's also the perfect way to reinvent leftovers, if spaghetti and meatballs was on the menu last night.
