Puff Pastry Pizza Is Your New Weeknight Go-To

Every week, we spotlight a different food blogger who’s shaking up the blogosphere with tempting recipes and knockout photography. Below, Jessica Merchant of How Sweet It Is whips up a remarkably simple weeknight pizza dish with help from some frozen puff pastry.

This pizza is shockingly simple. Why? Frozen puff pastry is ridiculously easy to work with and oh-so-delicious. Make this now!

Puff Pastry Pepperoni Pizza
Makes 18 pieces

2 sheets puff pastry, thawed
1 cup tomato or marinara sauce, your favorite
1 teaspoon dried Italian seasoning
2 garlic cloves, minced
1 cup freshly grated fontina cheese
A bunch of mini pepperoni, to taste
¼ cup finely grated Parmesan cheese

Preheat oven to 425°F. Place thawed puff pastry on baking sheets lined with parchment paper.

Spread tomato sauce evenly over top of puff pastry, leaving a small border at edges. Atop this, sprinkle herbs and garlic evenly between both sheets, then sprinkle fontina and mini pepperoni.

Bake for 20 to 25 minutes, or until the pastry is puffed and the cheese is golden. The pastry will look crazy puffed up (like the photo above) but then deflate once out of the oven. Cover with Parmesan and cut each pastry into 9 slices. Serve!
