Roasting beets can take up to an hour. A more summer-friendly way to prepare them? Cut them up and steam them. You’ll shorten their cooking time by half (or more!). Simply quarter trimmed and scrubbed medium-size beets and steam them until tender. (Cooking them with the skins on keeps their color vibrant.) When done, they should offer little resistance when pierced with a sharp knife. Once they’re cool, use paper towels to rub off the skins.
