All cookie dough is edible, but not all cookie dough is safe to eat. Considering the best part of making cookies is licking the chocolate chip-studded spoon clean, we often throw caution to wind and eat the dough anyways. But raw eggs and uncooked flour can make you seriously sick (think: E. Coli). So not delish.
This sad reality is what makes our edible cookie dough one of Delish's greatest culinary achievements ... ever. Candace, our senior editor who created the recipe, deserves an award. The magical mix of crushed graham crackers (the major game-changer!), butter, sugar and mini chips tastes exactly like cookie dough. It's a cookie monster's godsend.
While we have no problem with eating the edible dough straight-up with a spoon (and you shouldn't either), it's not the best way to share. When you want to spread the cookie dough love, make these chocolate-covered bites. They look like fancy truffles but require absolutely no candy-making skills whatsoever.
The process starts the exact same way as edible cookie dough. Throw everything into the bowl and mix until fluffy. It's gloriously easy. The next step isn't much harder: Just scoop tablespoon-sized balls onto a parchment paper-lined baking sheet and freeze until solid. (A small cookie scoop makes this step painless.) When they're frozen, whisk some coconut oil into a melted chocolate to make a DIY magic shell and dunk away! Rainbow sprinkles aren't totally necessary taste-wise, but they're irresistibly adorable.
