Chicken Fried Cauliflower Is A Vegetarian's Fried Dream

Everyone loves fried chicken. So much so that other foods try to be fried chicken. Let them. If there's anything we can learn from chicken fried steak, it's that a double flour dredge and fry treatment can make almost anything amazing-including vegetables.

We've been on a kick lately of scandalizing virtuous veggies and transforming them into indulgent grub. First we deep-fried zoodles to make cheesy curly fries, and now we're frying cauliflower to make chicken-fried vegetarian "steak." Don't let the name fool you: No chickens or cows were harmed during the process of this recipe.

Before your "steaks" hit the oil bath, they need to steam quickly. If you skip this, you'll end up a golden-brown crispy crust but a not-so-tender floret. Once the cauliflower is crisp-tender, it's time to let 'em drain paper towels. The drier and cooler you can make them, the more crunch you'll get from frying. Just like for fried chicken, you want the crunch.

Most chicken-fried steaks are served with gravy. Creamy and delicious as it might be, it's not what we crave on a hot summer day. We made things simple with a homemade hot honey hack. If you've never heard of the spicy bee product, your life is about to change. Once you try the sweet and spicy glaze, you'll want it drizzled on anything and everything. It's particularly amazing on pizza, fried chicken and, now, fried cauliflower steak. Go forth and make chicken fried cauli steak happen.
