Don't you just love how certain foods take you back? I'm still a big fan of foods I liked when I was a kid, and some of my fondest childhood memories involve birthday parties at the roller bowl eating skating rink nachos. You know the kind - round tortilla chips drizzled in cheese sauce, with a few jalapeños on the side if you liked to live on the edge. I'm a sucker for nostalgic foods, so when I had the idea to make a dessert based off the old childhood snack, I knew I'd struck gold. Introducing Cheesecake Nachos!
This recipe takes basic nachos and gives it a sweet upgrade with homemade cheesecake sauce. Best of all, it takes all the fussiest parts of cheesecake and swaps it for something way easier. I love any cooking hack that makes life easier, and using graham crackers for the crust definitely gets the job done.
Top your cheesecake nachos with whatever you like, but the choice was pretty easy for me: New York Style! The strawberries give this rich dessert a nice touch of sweetness, and the chocolate sauce makes it that much more indulgent. Add toasted coconuts for some oomph, and you've got a party-worthy snack that's way better waiting for cheesecake to set.
