A Healthier Twist on Chicken in a Biscuit

A burger on the grill is amazing… but that red meat’s not so great for you. Chicken in a biscuit? Also amazing… except that chicken’s fried. So here’s the best of both worlds: A chicken burger on a biscuit. This savory recipe, inspired by one at a favorite restaurant, Bubby’s, uses lean chicken and sneaks some veggies into the patty, too! Serve it on a fluffy biscuit topped with cheese, pickles and honey mustard sauce for the perfect blend between a burger and chicken in a biscuit.

Chicken Burger in a Biscuit
Serves 6
Prep time: 15 minutes
Cook time: 30 minutes

Ingredients
Storebought biscuits or biscuit dough
1½ lb ground chicken
1 zucchini, grated
1 small yellow onion, grated and moisture squeezed out
1 small carrot, grated
¾ c breadcrumbs
1 egg
salt and freshly ground pepper
To serve (optional)
Pickles
Cheese
Honey mustard sauce

Directions
1. Prepare the biscuits according to packaging directions.
2. In a large bowl, combine the chicken with the grated zucchini, onion, carrot, breadcrumbs, egg, and a generous pinch of salt and freshly cracked pepper. Fold together until combine. With dampened hands, form into 6 patties, and arrange on a parchment lined sheet tray.
3. On a lightly oiled griddle or nonstick pan over medium-high heat, cook the patties for 6 to 8 minutes per side, until cooked through. Place cheese slices, if desired, on the patties after flipping, so that they melt.
