A diagnosis of celiac disease, which affects more than 200 million people in the United States, doesn’t have to be a death sentence for people who love to eat. But intolerance to gluten (a protein in wheat, rye, and barley) does mean keeping an eye on ingredients lists and employing some creative cooking. Food blogs like Gluten-Free Girl have helped deliciously guide celiacs through their days that are missing gluten—but filled with every other fresh, vibrant food any cook would love. In honor of Celiac Awareness Day and Shine readers out there who steer clear of gluten, we’re serving up great, fall-friendly gluten-free dishes from some seriously talented food bloggers. Think cheesy lasagnas, kicky curries, and a cookie you can eat for breakfast.

Gluten-Free Breakfast Cookie

We very much like the idea of starting the day with a cookie. This gluten-free breakfast-appropriate version is made with gluten-free oats, bananas, and blueberries, and would also make a nice afternoon snack with a cup of tea.

Zucchini (Summer) Paella

"I am madly in love with this dish," writes Naturally Ella, and with its smart use of end-of-season tomatoes and zucchini fragrant with smoked paprika and turmeric, we can see why.

Fall Greens with Apples and Walnuts

Lettuce and shredded kale are a fall dream when paired with sweet Gorgonzola cheese, apples and walnuts before being tossed in a maple vinaigrette.

Black Bean Chili

This chili makes us long for a game on the television and a cold, wet day outside. “Football and chili,” writes Alaska from Scratch. “Ah, the glories of fall.”

Smoked Salmon and Soba Noodle Salad

Cook this dinner with naturally gluten-free 100 percent buckwheat soba noodles (despite its confusing name, buckwheat is actually a fruit seed) and gluten-free soy sauce in less than 10 minutes.

Slow-Cooker Cabbage Rolls with Brown Rice and Herbs

"Pale green heads of cabbage, firm to the touch and frugal to the pocketbook, caught my eye at the market," writes Simple Bites, and this lazy cabbage rolls recipe was born.

Curried Lentils, Corn and Chard with Roasted Potatoes

This lively vegan recipe is ripe with the flavors of late summer produce, then made kicky with curry powder and a hit of jalapeño.

Lamb Stew with Dried Plums

"No wonder this is Katniss Everdeen’s favorite dish from the Capitol," writes Food Through Pages, a blog that brings food from books to life. Use two pounds of cubed lamb.

Sausage and Kale Mock Lasagna Casserole

Substituting blanched kale for noodles, Kalyn’s Kitchen makes a riff on lasagna that’s even more fall-appropriate than the original.

Egg Chorizo Bake with Crispy Potatoes

Eggs are not always for breakfast and this recipe is proof. Any recipe accented with Cholula hot sauce is one we like.
