Oyster mushrooms make for a convincing chicken substitute because of their meaty texture. That means all it takes is the right seasoning and cooking method to get the yummy fungi to taste just like the real thing (or at least pretty close).

Ingredients:

  • Soy milk

  • Lemon juice

  • Oyster mushroom

  • Cooking oil

  • 1 teaspoon baking soda

  • Flour

  • Sugar

  • Salt

  • Pepper

  • Garlic

  • Paprika

  • Grilled chicken rub

Step 1: Mix soy milk and lemon juice in a bowl to create “vegan buttermilk.”

Step 2: Next, toss in your oyster mushrooms, and let them marinate for a few minutes.

Step 3: In a separate bowl, mix the flour, baking soda, sugar, salt, pepper, garlic, paprika and grilled chicken rub.

Step 4: Coat the soaked mushrooms in the batter, then fry in oil or a deep fryer such as the FryDaddy deep fryer. Once crispy, place on a paper towel to soak up excess grease. Finally, enjoy.

Dillon rates the vegan fried oyster mushrooms a 9 out of 10 — and he’s aware what he’s about to say may sound crazy.

“People are going to come after me for saying this tastes like fried chicken, but this stuff really does taste like fried chicken,” he says. “The batter is sweet, crispy, crunchy, savory… The texture really is a lot like a fried chicken thigh.”

While no one will believe they’re actually eating chicken, these vegan bites will definitely satisfy your craving.

“They’re really convincing,” Dillon says. “You’re not going to fool anyone, but if anyone’s willing to try it, you can easily replace fried chicken with these things.”
