Recipe Exchange: Broccoli salad ideas

A reader inquired about broccoli salad ideas. Several contributors responded. Joan from Hastings says her steamed broccoli salad is good with any meat and the leftovers may be frozen for later. Barbara from Auburn sent in her long-time favorite recipe for broccoli salad. Amanda from Coldwater says her broccoli & cauliflower salad is delicious warm in winter or nicely chilled in summer.

Steamed broccoli salad

3 T minced onion

5 T olive oil

1 good sized bunch of broccoli

1/4 t garlic powder

1/2 t dried oregano

3/4 t salt

1/4 c water

1/4 t pepper

Cut up broccoli into bit sized pieces, using the flowerets and tender parts of the stems. In a large saucepan, sauté onion in olive oil until caramelized. Add broccoli, garlic powder, oregano, salt, pepper and water. Reduce heat to simmering. Cover and let steam for 10 to 15 minutes until broccoli is tender-crisp. Serve warm or cold.

Broccoli salad

2 bunches broccoli, cut up into bite size pieces

1 small red onion, chopped

1-1.5 oz bag cashews

1-8 oz can water chestnuts, drained

1/2 c raisins

3 strips of bacon, fried and crumbled

1 c mayonnaise

1/2 c sugar

In a salad bowl, combine broccoli, onion, water chestnuts, cashews and raisins. Mix together mayonnaise and sugar. Drizzle over broccoli mixture and toss to coat. Sprinkle crumbled bacon over all. Cover and refrigerate until chilled.

Broccoli & cauliflower salad

2 qts water

3 T softened butter

3 T finely sliced green onion

1/2 t dried thyme

1 t grated lemon peel

1/4 t salt

1/4 t pepper

3 c cauliflower florets

3 c fresh broccoli florets

1 c halved cherry tomatoes

Heat water in a 4 quart saucepan to boiling. Meanwhile, in a small bowl, stir together butter, green onion, thyme, lemon peel, salt and pepper until well blended. Add cauliflower to boiling water. Cook for 2 minutes. Add broccoli and cook 3 minutes longer. Drain and place in a salad bowl. Add butter mixture and toss to coat vegetables. Garnish with halved cherry tomatoes and serve.
