From buffalo chicken dip to creamy spinach and artichoke dip, every great cheesy party dip hearkens back to the godfather of them all: queso. The Tex-Mex favorite is a flavorful celebration of cheese and spice, with occasional mix-ins like chorizo, beef or pico de gallo.

Queso is a simple appetizer you could make in under 30 minutes, and the final steps involve it simmering for a while on the stove. While the queso cooks together and its flavors get to know each other, you could be focusing on getting everything else ready, or relaxing and catching some of the game.

How to make queso

In a preheated skillet, crumble 8 ounces of beef until browned. Then add pico de gallo and continue cooking for a few minutes.

In a medium saucepan, combine cheeses, beans, milk and the beef and pico de gallo mixture. Place the saucepan on low heat and let simmer, stirring frequently until the cheese is melted.

To serve, line the bottom of a large bowl with sliced avocado and top with the cooked queso. Serve with tortilla chips.
