Korean nurungji is being relabeled as the viral ‘sushi waffle’

For all you sushi lovers out there, cooking TikTok has the newest way to enjoy your favorite dish.

Victoria Minell (@victoriaminell) posted a video a few weeks ago taking sushi to the next level. She introduced the concept of a sushi waffle, where you’d take sushi rice, flatten it, put it in a waffle maker and then top it with your favorite sushi toppings. The sushi waffle also looks similar to poke bowls, which also utilize raw fish, cucumbers and avocado.

The video went viral as sushi enthusiasts were excited to see a creative take on their favorite dish. Minell’s post has over 13 million views, over 1.5 million likes and over 11,000 comments — many of which couldn’t wait to try the dish.

Minell also posted a video a few days later showing a step-by-step tutorial on how to make the waffle.

“Omg this is the best way I’ve seen to making crispy rice, no greasy frying!” said @elliebeilash.

“i’ve never craved something i’ve never tried so much,” commented @madigummybears.

“you just changed my life in less than 15 seconds,” @spicycapricornroll333 said under the same video.

The dish, which takes at-home sushi to another level, stems from a traditional Korean dish called nurungji — known in English as scorched rice. It originally was the overcooked layer of rice at the bottom of the pot. However, as Koreans and other rice-based food cultures have moved towards the electric rice cooker, Nurungji has become a dish to make separately.

To make it, all you have to do is take rice — the drier, the better — flatten it out over sesame oil and let it cook on both sides. You can also sprinkle sugar on the rice to add a little sweetness.

Other influencers have posted their versions of the sushi waffle, and the comments are recognizing where the dish comes from.

“Nah they gentrified nurungji,” commented @qylechon under this post.

While the base of the sushi waffle is nurungji, the sushi waffle is simply a viral trend that is influenced by nurungji. Furthermore, nurungji is a Korean dish, and sushi is traditionally a Japanese dish — making this food the perfect example of how the Internet can push forward food culture.
