The restaurant at the top of the Trade Hotel under construction in the Deer District, near Fiserv Forum, will be Italian themed.
A 4,300-pound pizza oven was hoisted nine stories Monday morning to the site of the future restaurant, which will be called Il Cervo (pronounced CHAIR-vo), meaning the deer in Italian.
Besides pizza made with sourdough, the restaurant's menu will include butter-poached lobster, grilled fish, dry-aged steaks served Florentine style, fresh cheeses made daily at Il Cervo, and handmade pasta and other Italian fare, spokespeople from the Milwaukee Bucks and restaurant said.
The Trade Hotel, a Marriott Autograph Collection hotel, and the restaurant are to open in spring. The hotel is across Juneau Avenue from the arena where the Milwaukee Bucks play.
Representatives of NCG Hospitality and Food Fight Restaurant Group, the groups behind the restaurant, attended the oven's hoisting. Madison-based Food Fight's restaurants include Monty's Blue Plate Diner, Johnny Delmonico's Steakhouse, Luigi's Pizza, Cento and Bar Corallini, NCG is an arm of the company that will operate the hotel.
Il Cervo is one of two restaurants planned for the hotel, according to previous reports. Il Cervo will have both indoor and outdoor areas for customers.
The other restaurant is to be a two-level restaurant and lounge anchoring the corner of West Juneau and North Phillips avenues. At Juneau and Fifth Street, the building is to have street-level retail space.
The Trade Hotel will have 207 rooms. The project site is one of the vacant lots that Milwaukee County gave to the Bucks organization as part of the public-private financing for Fiserv Forum.
