Village Market, Paristown plaza opening soon, adds popular burger spot to restaurant lineup

A popular Louisville burger shop is packing up and moving to the Village Market, a restaurant complex set to open next month in Paristown Pointe.

Bunz Burgerz, which has been stationed on Baxter Avenue for 11 years, is moving to the new plaza, according to a release from the Paristown Food and Beverage Group. Kentucky's "best 'dive burger,'" as proclaimed by the release, will be among the five restaurants planned to operate out of the complex, which had previously been home to The Cafe before that diner moved across the street in 2020.

"We decided it made a lot of sense to move Bunz to a more appealing and active spot like the Village Market," Brandon Detenber, owner of the popular burger joint, said in the release. “We will have the same menu with the same great burgers, and the same great staff, including my three kids who are really looking forward to taking part in all of the events in Paristown.”

Bunz Burgerz is serves smash burgers off of a flat-top grill, with special seasoning and house-made specialty sauces.

The Village Market has been under construction since January, according to officials behind the project, and they plan to open the renovated complex across the street from the Stoneware Art Building in September.

Several restaurants are slated to open on the more than 5,300-square-foot property, according to the Paristown Food and Beverage Group. A bar is also planned, which organizers say will serve patrons inside and outside on a 3,000-square-foot patio that will flow into Christy's Garden, an urban event venue and green space in the neighborhood.

The project has been in the works for years, Paristown Food and Beverage Group President Wes Johnson said, with contractor Ormond Construction encountering plenty of challenges while working to build during the pandemic.

"(COVID) has delayed everything in all of our lives," he said. "It has been in planning stages since 2019."

Johnson's group has been working with the five restaurants planning to open in the new space throughout the construction process, he said, ahead of the coordinated opening.

"In keeping with the grit and determination that has always been a part of Paristown's long history, we have also been forced to be patient and resilient as we complete the final piece of Paristown's first phase of development," Johnson said.

It'll be a unique setup at the Village Market.

According to a release from officials behind the project, restaurants on site will have collective bargaining power for food supplies and other necessary items, which they said should result in lower costs for restaurants and higher-quality products for customers. Restaurants will stand as separate businesses but can collaborate as well to reduce delivery trips and food waste while cutting back on the market's carbon footprint.

Johnson declined to comment on how much the facility cost to build.

Jeff's Donuts, the first shop announced as part of the Village Market project, will be the only breakfast shop in the complex. The Jeffersonville-based doughnut shop will serve fresh pastries every morning at the new Village Market, which will be open seven days a week.

Along with it, two other restaurants will be coming to the Village Market when it opens next month. Both restaurants are owned by Emil David.

The first new spot in Village Market is a fried chicken restaurant called Ramble, which David said will operate as a "non-traditional fried chicken sandwich concept that offers different fried chicken dishes on a sandwich," including options like chicken parmasan and General Tsao's chicken.

The second is a taco spot called Tacorito that will serve burritos, tacos, burrito salads and bowls. According to a press release, the restaurant will serve "uniquely seasoned" beef barbecue, chicken verde, rojo chicken, bang bang shrimp, al pastor and vegan options, including marinated and deep-fried tofu.

Paristown Pointe has been home to several notable developments in recent years. The popular Paristown Hall music venue opened in the neighborhood near downtown Louisville in 2020, and plans were released earlier this year to redevelop the long-vacant Urban Government Center as well.

Village Market is slated to open in mid-September. Once open, the Village Market will be open at these times:

  • Sunday-Thursday: 11 a.m. - 9 p.m.

  • Friday-Saturday: 11 a.m. - 10 p.m.

Jeff's Donuts will have its own operating hours at these times:

  • Sunday-Thursday: 7 a.m. - 9 p.m.

  • Friday-Saturday: 7 a.m. - 10 p.m.
