Bistoro offers a taste of Spain as one of Pueblo's favorite late-night, date night restaurants

Bistoro, 109 Central Plaza, is a newer wine bar that is slowly becoming a nighttime favorite and couple's destination restaurant in Pueblo.

With a healthy balance of the décor that is inspired by Spanish stylings, and a significant selection of wine, Bistoro looks to stand out.

Bistoro also offers a unique take on various food items.

"We have our own take on French Fries that is familiar but also their own," said owner Joette Dhamo. "The fries are traditional along with sweet potato but are combined with mushrooms and a special sauce."

She said that pairs well with paninis that are both meat and veggie-filled.

Dhamo and her husband both call Spain home. Dhamo has drawn on Spanish culture to influence the atmosphere at Bistoro.

The wine at Bistoro, especially she said, is a major part of making Bistoro stand out.

"Wine is a huge passion and this is a major tradition in Spain that influences their decisions," she said.

Bistoro's first location was near Neon Alley in Downtown Pueblo. She moved to her current location and has experienced a groundswell of support from patrons.

"(We get) a lot of engineers at EVRAZ steel mill along with guests at the Marriot," Dhamo said. "Many of them feel like they are home again thanks to the decor and the overall atmosphere."

Bistoro has been voted second and third in The Pueblo Chieftain's Best of Pueblo categories of best Late Night Restaurant and Romantic Restaurant.

Dhamo said couples frequently enjoy the restaurant for both its atmosphere and the wine.

Creativity is also a big part of what makes Bistoro special, Dhamo said.

The menu doesn't just offer unique options, but creative ones that are often named right after its created.

"Many times, an entree will be made and given a name on the spot," she said. "We're always open to suggestions on adding entrees to the menu."

Bistoro's versatility, Dhamo said, has helped it thrive — even during tough times such as the COVID-19 pandemic.

The restaurant relied on takeout orders during pandemic closures and curfews. Typically, the restaurant relies on in-restaurant reservations.

Dhamo said in the new year she will continue toe experiment and grow her clientele.
