Beer: Starting Over Dortmunder 5%

What's the deal? We're always excited to go back into the beer history books and brew up a traditional beer that has been glossed over. For Starting Over, we bring to you a Dortmunder that we kept as classic to the style as possible. This pale lager has an initial faint sulfur aroma, then opens its way up to some semi-sweet grainy notes. The flavor is the perfect intertwining of Pilsner malt, and noble hops. Neither one ever dominates the other, working in harmony to create a crisp clean beer with a very low lingering bitterness that fades quickly. Smooth and well balanced, Starting Over is the perfect balance of malt driven and hop driven lagers.

Beer: Permission Slip DIPA 8%

What's the deal? A DIPA with Mosaic and Azacca hops. The nose is peach, ripe orange, and nectarine and the flavor. Then followed up with a nice, soft mouthfeel and low bitterness.

What's the deal? Double NEIPA (7.8% abv) We brewed this Double NEIPA with Galaxy, Mosaic Incognito & a newer German variety, Hallertau Blanc hops. Sweet and floral on the nose. Hallertau Blanc hops are known for their distinct white wine character, blending perfectly here with plentiful notes of passionfruit, peach, berry and vanilla.

What's the deal? Single Hop IPA (7.2% abv) Our single hop series continues! This rotating single hop series explores the flavor and nuance of the most sought after hops around the world. This one is no exception, as we turn our focus to Galaxy hops, one of the most highly desired hops out there. This hop is well known for it's overflowing flavors of citrus and peach. We get heavy citrus on the nose, followed by an explosion of bright citrus and peach, with medium body and a slight bitterness.

What's the deal? Coconut Porter (6.5% abv) An American Porter that is layered with chocolate malts with a slightly sweet vanilla nose. We finished the beer on both toasted coconut and coconut cream for a deep and dimensional experience.

Beer: Side Pull Tap Tower Debut!

What's the deal? Czech beer drinking culture has always fascinated our brewer, Ben. The passion and purity of it is rarely rivaled, but somehow not as widely revered as other European neighbors. The beer is often incredibly simple in construction, yet complex and nuanced. A few months ago, we commissioned a 4 tap glycol cooled tower to be built with 4 side pull beer faucets from Lukr in the Czech Republic. These guys are the leaders in this area and unmatched in quality and dedication to their craft. We then crafted 2 beers, all made with Weyermann malt that was grown and malted in their facility in the Czech Republic. We use only Saaz hops grown in the Czech Republic, as well as 2 variants of a yeast strain from the Urquell Brewery. For one of our offerings, we took the traditional idea of doing a 50/50 blend of the Pale and Dark Lagers to make a pre-kegged Garnet Lager. In addition, we took our own twist for our fourth tap and brought our British inspired Amber Ale, Nottalagah, a little closer to its UK roots by using East Kent Goldings hops.

All full and milk pours will be in classic dimple mugs. For our full pours, we will pour it traditionally (Hladinka). This will start with a thick, dense and creamy head of foam followed by crystal clear pours of beer. This head is purposeful and is there to protect the freshness of the beer. Don't be worried when the faucet is immersed when pouring, as this is the intention. This style of pouring allows for the perfect mix of sweetness and bitterness in the pours. Milk pours (Mliko) will be available for 1/2 price, as the contain about half the liquid. These pours are not the foam you are used to from improperly poured beer. They're creamy, dense and almost "wet" feeling. We prefer our pale lager poured this way, as it really showcases the Saaz hops. Look at this style of pour as a dessert or digestif, and drink it quickly before it turns back into liquid.

Our line of Czech-style lagers will be called "Rhapsody" as a nod to their Bohemian roots. Each is made with only Czech malt, Czech Saaz hops and yeast from the famed Urquell brewery. All water is treated with our reverse osmosis filter and then minimally altered to match the water profiles of the famous Czech breweries. All are unfiltered, and all clarity is achieved through time and process and all come in at exactly 5% ABV.

Svetly — Premium Pale Lager — This is beer at its purest form. Brewed using only Floor Malted Bohemian Pilsner Malt from Weyermanns facility in the Czech Republic and Czech Saaz hops. The malt flavors are complex for a Pilsner-type beer, and the bitterness is strong but clean and without harshness, which gives a rounded impression that enhances drinkability.

Rezany — Garnet Lager — a 50/50 pre blended lager made of Svetly and Tmavy. Deep red colored with toasty malt hints backed by a touch of caramel. Crisp and easy, the hop profile allows for palate cleansing, yet satisfying sips.

Tmavy — Dark Lager — something close to a Czech version of a German Black Lager, this beer is dark, yet immensely complex and drinkable. Hints of toffee, chocolate and dark fruits lead the way, followed by an ever so slight kiss of roast. Medium bodied with just enough of a hop level to keep things clean, yet not distracting.

What's the deal? We are also releasing 2 beers that we created to pour at Pastrytown, put on by our homies at Other Half in Brooklyn, NY. These both fit the pastry vibe and will be available in the tap room for on site pours and to go in crowlers the day of Pastrytown, this Saturday.

Soft Swerve — Pink Drank — Drawing inspiration from a coffee chain in Seattle that you may know, we put this one together with strawberry, acai, coconut cream, pink dragon fruit and a touch of raspberry. After getting our house ice cream treatment, this one was ready to go. Super vibrant and refreshing, this will bring you back to warmer days. Also, if it may give you the urge to complain to the manager. Please use restraint.

Beer: Soft Swerve — Blueberry Cream Cheese Pop Tart

What's the deal? We are also releasing 2 beers that we created to pour at Pastrytown, put on by our homies at Other Half in Brooklyn, NY. These both fit the pastry vibe and will be available in the tap room for on site pours and to go in crowlers the day of Pastrytown, this Saturday.

This is an exercise in excessive use of blueberry. Is it too much? Maybe. But we don't think so. Expect a massive blueberry presence along with a huge cream cheese/cheesecake pop and some beautiful baked good/pastry/danish vibe throughout. The house ice cream treatment provides some great vanilla sweetness and texture to accompany the rest of the goodness.

What's the deal? 8.4% ABV. Whether being comforted after a devastating loss wrestling loss, hugged in celebration of an unlikely victory, or just riding shotgun on a cold winter day in the old rusty Chevy Lumina- each painful or pleasant memory of the good ole' days comes rushing back with the smell of brown smokey leather. Dad's Leather Jacket, gifted by mom, worn by dad, and now commemorated in this Smoked Brown Ale, is about the times in your life you were challenged and shaped under the steady hand of the man, the myth, the legend. A toast to whoever wore the leather jacket in your life- to the lessons learned, the scraped knees, and the dirt they rubbed in it. One day you might fit that jacket too ... we can certainly try. Dark, smokey, appropriately cold, and a little nutty. This one's for the father figures we all owe a pint to!
