Reviewed time as public health control option available for this process. Manager stated plan to address by using smaller batches in future to allow for more adequate ice bath temperature control.

  • High Priority - Evidence of oil dumped onto ground. On drive thru side of building, evidence of grease being dumped on the ground behind yellow curb due to blackened pine bark and soil. **Warning**

  • High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed 2 flying insects in kitchen area, 1 at grease storage tank, and 1 in dry storage area.

  • High Priority - Time/temperature control for safety food held using time as a public health control marked with a time that exceeds the 4-hour limit. See stop sale. On make line, cut tomatoes marked for a seven hour discard time. Operator stated tomatoes out for 30 minutes, remarked for correct time. **Corrected On-Site** **Warning**

  • High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At fry station, fries (130F - Hot Holding). Operator discarded and cooked new fries. **Corrective Action Taken**

  • High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Splitter added at mop sink, missing back flow preventer on non-chemical dispenser side.
