Popular coffee shop opening new location in Rochester

A popular local coffee house is opening a satellite location in the Hyatt Regency Rochester, 125 E. Main St. Boulder Coffee Co. owner Keith Rose, 38, of Gates, hopes to have the new venture up and running by April 1.

“I wasn’t really looking to expand,” said Rose, who has owned Boulder, 100 Alexander St., for the past three years.

However, last December he was approached by Hyatt general manager Jay Rettberg asking whether Boulder would be interested in doing business in the hotel’s second-floor lobby.

“Obviously, it was a great news,” Rose said. “We were really excited to hear from them” — and that Rettberg wanted to add a local business to the property.

The lobby space is now being remodeled for Boulder.

Whereas the original South Wedge location, in existence since 2005, has rustic décor, the hotel operation “will have more of a modern feel,” Rose said. “We want it to kind of match some of the interior they have there. So, it will be a simple, modern, sleek design.”

The business will be open from 6 a.m. to 2 p.m. daily to start off, he said.

It will offer the same coffee options as Boulder and a selection of grab-and-go food items (cookies, muffins, etc.).

The new Hyatt Boulder will not replace a Starbucks that opened on the hotel’s ground floor in 2017 and is now closed.
