Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.

  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.

  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.

  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • One employee had an expired food worker card.

  • The back hand sink was blocked by a strainer. Food workers reported the hand-washing sink in a tea area was too hot, lacked cold water and was not used. A food worker washed their hands in a prep sink.

  • Tapioca pearls were stored at room temperature with no time as a control indicator and no written time as a control procedures.

  • No sanitizer bucket was available at Ding Tea.

  • Dishes at Ding Tea were washed in a prep sink.

Pacific Mini Mart

May 15: 40 red points; 5 blue points.

Comments:

  • A food worker was not knowledgeable about food safety and was unable to demonstrate active managerial control of risk factors. A PIC with active managerial control must be present at all times.

  • Employees did not have valid Washington state food worker cards.

  • Hot held chicken tenders were less than 135 degrees.

  • There was no probe tip thermometer available during the inspection.

  • No sanitizer solution was prepared.

Munchies Plus

1110 Yelm Ave. E., Yelm

May 14: 35 red points; 15 blue points.

Comments:

  • The establishment was cited for improper use of time as a control.

  • Cold held TCS food items in a refrigerator were above 41 degrees.

  • A sanitizer solution was not prepared at the time of inspection.

  • Clean dishes were in the splash zone of a hand sink.

Denny’s

600 Trosper Road SW, Tumwater

May 13: 10 red points; 5 blue points.

Comments:

  • Pico de Gallo with cut tomatoes was 47-50 degrees in a cold hold prep unit rather than at or below 41 degrees.

  • Test strips for a low-temperature chlorine sanitizing ware-washing unit were unavailable during the inspection. The ware-washing unit was not sanitizing because a chlorine sanitizer needed to be replaced. Test strips are needed to verify concentration.

Comments:

  • Cooked mushrooms in a prep cold hold unit were at 45 degrees rather than at or below 41 degrees.
