Before I started at Delish, I'd never heard of buckeye desserts. I quickly learned that they were a hit with our readers, with buckeye brownies and buckeye cookies topping the charts. Originating in the Midwest, buckeyes are traditionally balls of peanut butter fudge dipped in chocolate. We've sort of taken that flavor profile and ran with it, and there's no lookin' back!
This buckeye pie is so good, it's worth throwing into your classic pie canon. In fact, if you feel fatigued by classic pumpkin pie, it could be a worthwhile addition to your Thanksgiving meal! It's pretty impressive looking with it's smooth ganache topping, and you could certainly fancy it up with a sprinkle of flaky sea salt.
The best part is, it's so much easier than your average pie! First of all, nix that complicated pie crust and make an Oreo crust instead! Next, whip together your peanut butter filling: a combination of peanut butter, butter, powdered sugar, and vanilla you'll want to eat right out of the bowl. When that's smoothed into your Oreo crust, top it with a classic ganache and refrigerate it until firm. Guaranteed it'll disappear faster than the old standards.
