Don't Panic! Here Are 6 Easy and Delicious Last-Minute Thanksgiving Sides

Even if you wait until the last minute to decide what to make, and have practically no time, you can still bring an excellent dish to the Thanksgiving table. Read on for six delicious and easy options!

No. 1: Spicy Cranberry Apple Relish

If you want to impress your dinner companions with practically no effort, this is a step up from your typical cranberry sauce as it features hot peppers and red wine, but it’s still a snap to make!

No. 2: Kelsey Nixon’s Skillet Candied Sweet Potatoes with Toasted Pecans

This recipe couldn’t be easier – it’s really a “set it and forget it” method. Kelsey melts a stick of butter in the bottom of a heavy-bottomed pot, then adds sweet potato rounds sliced to about 1/3 inch thick. She mixes in a combination of brown sugar, white sugar, cinnamon and nutmeg, then covers with a tight-fitting lid and cooks for an hour. When they’re done cooking, add a dash of vanilla and stir. Top with toasted pecans before serving. That’s it!

Tip: If your sweet potatoes break down too much for your liking, these are also excellent served mashed.

No. 3: Lemon & Olive Oil Potatoes

Got some potatoes and a lemon? You’ve got a side! You’d be surprised to see how much the simple addition of olive oil and lemon juice can transform simple boiled potatoes! This quick and delicious dish is also cooked on the stove top so it won’t take up oven space.

No. 4: Cheesy Cauliflower

Creamy mashed cauliflower blended with herbed Boursin cheese makes for a side dish the whole family will love! It's also easy to prep ahead.

Tip: Don't bother to chop up the cauliflower -- if you cook it with half a cup of liquid (water or stock) in a tightly covered pan, the steam will cook it through, and you can just mash it up.

No. 5: Carla Hall’s Candied Acorn Squash

This candied acorn squash is beautiful on the table and the caramel complements the natural sweetness of the squash, plus it couldn’t be easier to make!

No. 6: Cookies and Cream Fudge
