Win Big on Super Bowl Sunday with Football Brownie Ice Cream Sandos

By Francesca Bean

You guys, the Super Bowl is in a few days! We’ve been in game day mode for a few weeks now, dishing up an assortment of wingbuffalo chicken, and queso recipes. Now, it’s time to get our sweet tooth on. Real talk: We’ve saved the best (and “coolest”) recipe for last. We’re talking about our Football Brownie Ice Cream Sandwiches! Not only are these the sweetest footballs we’ve ever seen, they’re also super easy to make. Talk about a touchdown!

Ingredients:
– 1 box brownie mix
– 2 eggs
– 2 tablespoons water
– 1/3 cup vegetable oil
– 7 cups (1.75 quart) vanilla ice cream
– 1 9-ounce can white cupcake frosting
– white sprinkles, optional

Instructions:
1. Preheat oven to 325 degrees F. Spray a 9×13 pan with nonstick cooking spray.
2. In a large bowl, combine brownie mix, eggs, water, and vegetable oil. Mix until combined. Spread in prepared pan.
3. Bake for 32-35 minutes. Let cool. Use a football-shaped cookie cutter to cut out the brownies. Place them on a cookie sheet lined with wax paper.
4. Remove the ice cream from the freezer. Using a sharp knife, cut the entire carton in half. Peel off the carton. Cut ice cream into 1/2-inch slices. Cut into football shapes. Place cut-out ice cream between two cut-out brownies. Place sandwiches in freezer for 30-40 minutes.
5. Use frosting to pipe lacing and stripes onto each ice cream sandwich. Top with white sprinkles. Enjoy!

Remove the ice cream from the freezer. Using a sharp knife, cut the entire carton in half. Peel off the carton. Cut ice cream into 1/2-inch slices. You’ll have to work quickly so that the ice cream doesn’t melt.

Cut into football shapes. Place cut-out ice cream between two cut-out brownies. Place sandwiches in freezer for 30-40 minutes.

Use frosting to pipe lacing and stripes onto each ice cream sandwich. Top with white sprinkles.

Plate them up, and you’re ready for a Super Bowl party!

Serve them alongside some candy and milk shooters.
