There are many ways to enjoy the famous fall squash. From sweet treats to savory soups, pumpkin makes an appearance in a variety of dishes. Here are five yummy pumpkin recipes to try this fall!

1. Vegan pumpkin chocolate chip banana bread

This pumpkin rendition of banana bread is so tasty you’ll want to make it all year! First, combine bananas, pumpkin purée, dairy-free butter and vanilla extract with a mixture of all-purpose gluten-free flour, brown coconut sugar, salt, baking soda and pumpkin spice. Sprinkle in a generous amount of dairy-free chocolate chips before baking.

2. Pumpkin cream cold brew

Thanks to this recipe, you can make Starbucks’ famous pumpkin cream cold brew in the comfort of your own kitchen. First, add whipped cream, half and half, and pumpkin spice to a glass. Then froth until thick. In a separate glass, add maple syrup, cold brew, and top with the rich pumpkin cold foam. Cheers!

This elegant recipe will have you seeing pumpkins in a whole new light. Begin by oven-baking an entire diced pumpkin. Once out of the oven, mash half of the diced pumpkin with butter. Then combine with cooked risotto. Finally, top off the risotto with the other half of the diced pumpkin and pan-fried sunflower seeds.

5. Pumpkin soup

This recipe for pumpkin soup calls for a Musquée de Provence pumpkin. First, clean, scoop out the seeds and cut into quarters. Before roasting the pumpkin in the oven, TikToker @quarantinekitchen.witchh places a garlic clove in the center of each quarter and then drizzles on some olive oil. Once finished, she scoops the pumpkin into a blender and adds sautéed onions, salt, ground masala, ginger powder and a splash of coconut milk before cooking the purée on the stove. Top off with roasted chilis, garlic, mustard seeds and oil.
