One-Bowl Vegan Chocolate Cake

John and Dana Shultz are the Portland, Oregon-based husband and wife duo behind the Minimalist Baker. What makes their recipes minimal? Each requires either just 10 ingredients or less, one bowl, or 30 minutes or less to make. Bonus: many are vegan or gluten-free.

This brings us to their vegan chocolate cake, which can be made all in one bowl and all under one hour. Seriously: Dana combines the wet ingredients (almond milk, vinegar, coffee, applesauce, and vanilla extract) in one bowl, sifts in the dry ingredients (cocoa powder, flour, baking soda, and sugar), and while the cakes are baking, she uses the same bowl to make the vegan chocolate buttercream frosting. She says it tastes exactly how a chocolate cake should: “Tender, fluffy, chocolatey, sweet, moist, decadent, generously frosted, and perfect with a glass of almond milk.”
