Unicorn Poke Cake Beats Birthday Cake Any Day

Will the unicorn trend ever die? We hope not. It might sound dumb, but we've become suckers for the color explosions that are unicorn foods (check out our cheesecake). And no, I'm not some food coloring junkie (although sometimes it seems like I might be). Rather, at this dreary, beginning-of-spring moment, a little color never hurt nobody. I hate the month of March more than most, and this pink-teal-purple cake made my day a little better.

I'll admit we've taken the Unicorn trend to some extremes - unicorn toast, really? - I can't help it! It's eye candy in the most amazing way. This poke cake is no exception. This an example of a recipe I dreamed up because I liked the title and then immediately thought "But wait, what the hell is it?!" After much discussion, I settled on making a boxed vanilla cake batter and dying it a few different colors: pink, green, and purple. Then I almost swirled them, but instead, I layered them on top of each other (this is SO easy!).

The only frosting that seemed to complete this look was pink. Princess pink, really. It's a marshmallow frosting that's perfectly fluffy and (believe it or not) just-enough sweet. Then I decorated the s*it out of it with sprinkles - because what's a unicorn recipe without sprinkles?! Not real ;)
