New life motto: Believe in the bacon weave. Don't believe me? I'm obsessed with anything a bacon weave touches: a BLT, a breakfast sandwich, a club. But for as much as we love stuffing one of these into a sandwich to make sure we get enough bacon in every bite, we had never thought of using the bacon itself as a bun. Well, now we know: It's a life-changer.
Not only is this a sandwich meant for the most obsessive of bacon lovers, it's also a smart option for anyone looking to ditch carbs. (Yes, I prefer to live in a world where six slices of bacon is better for you than two slices of bread.) To make sure the sandwich is easy to eat, I cooked the egg inside a mason jar lid, which forms it into a nice circle, then trimmed the cooked bacon weaves to match that size.
The result is a (pretty adorable) handheld bacon breakfast sandwich. You can obviously extend this idea into a BLT or Turkey Club - or top this any way you'd like. We went for mashed avocado and cheddar because what's a breakfast sandwich without them? NOTHING. But you knew that.
