Instructions:

  1. Add the chicken, olive oil, garlic, dried Italian seasoning, salt and pepper to a large mixing bowl. Mix well to evenly coat the chicken with the oil and seasoning. Allow the chicken to marinate for at least 10 minutes. Set aside.

  2. Add the tomatoes, lemon juice, garlic, red onion, basil, salt, pepper and Parmesan cheese to a medium mixing bowl. Gently toss to combine. Set aside.

  3. Prepare white rice.

  4. Set a large skillet over medium-high heat. Once the skillet is nice and hot, drizzle with olive oil and add in the chicken, working in batches, if needed. Cook chicken until fully cooked. Remove the chicken from the skillet and set it aside on a clean plate.

  5. Once the white rice is complete, add to a bowl with the cooked chicken tenders and bruschetta topping.

  6. Serve garnished with additional Parmesan cheese, basil, parsley or freshly squeezed lemon juice.

Serves four to five people

To serve:

  • 1/4 cup scallions, chopped

  • 2 cups cooked rice

Instructions:

  1. Bring a large pot of water to a boil and add 1 tablespoon of salt.

  2. Place broccoli florets in for 3 to 4 minutes until just tender and strain. Run under cold water to stop the cooking process and set aside.

  3. Heat a heavy-bottomed skillet over high heat until smoking hot.

  4. Pat steaks dry and then salt steaks with about ½ tablespoon of kosher salt on each side, coating thoroughly.

  5. Place 1 tablespoon of oil into the hot skillet then carefully place the steak down. Do not move for 3 to 4 minutes in order to achieve a good sear. Once the steak has a dark brown color, repeat the process on the other side. Remove from the pan.

  6. Let the pan cool a bit and then drain out excess oil; wipe out the extra salt with a paper towel.

  7. Add 1 teaspoon coconut oil to the pan and sauté garlic and ginger on low heat until fragrant, being careful not to burn.

  8. Add in soy sauce, water, lime juice and brown sugar and cook for 2 to 3 minutes on medium heat to combine flavors.

  9. Stir cornstarch water mixture into soy sauce and cook until just slightly thickened. If the mixture gets too thick, add in more water to create a thinner consistency.

  10. Taste and adjust seasonings.

  11. Slice beef thinly against the grain and add into sauce. Cook gently over low heat until desired doneness.

  12. Once the meat has reached the desired temperature, stir in blanched broccoli.

  13. Serve over rice and sprinkle with chopped scallions.

Instructions:

  • Scoop avocado flesh in a bowl and add onion, chopped cilantro, lime juice and Tabasco, if desired.

  • Mash with a fork until the mixture reaches a creamy consistency.

  • Fold in diced apple and season with salt to taste.

  • Serve with tortilla chips.
