The author: Nicole Downs, who is behind the popular keto blog Oh My Keto. Downs tried lots of different diets to lose weight with no success, that is until she discovered keto. Within just one year of committing to the keto life, she lost 92 pounds. She wanted to pen a cookbook in order to help others have success on the diet, too, without ever feeling deprived.

Spinach Dip

Makes about: 3 1/2 cups | Serving size: 1 cup and 1 tablespoon | Prep and cook time: 30 minutes or less

Ingredients:

  • 1 (12-ounce) bag frozen chopped spinach

  • 1 1/2 cups full-fat sour cream

  • 1/2 cup mayonnaise

  • 2 teaspoons dried minced onions

  • 1 1/2 teaspoons dried parsley

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/8 teaspoon ground white pepper

  • 1/2 teaspoon fine sea salt

  • 1/4 teaspoon blended erythritol-stevia sweetener

  • 1 (8-ounce) can sliced water chestnuts, drained and chopped

  • 4 scallions, sliced

Directions:

  1. Cook the spinach as instructed on the package and let it cool.

  2. While the spinach cools, put the sour cream, mayo, spices, salt, and sweetener in a large bowl and whisk until smooth and creamy. Add the chopped water chestnuts and scallions and stir well to combine.

  3. Once the spinach is cool, squeeze it to remove the excess water, then add it to the bowl with the dip mixture and stir well to combine. Cover the bowl tightly with plastic wrap and refrigerate for at least two hours to allow the flavors to blend. Stir well before serving.

  4. Store in an airtight container in the refrigerator for up to one week.

Per serving: 251 calories, 23 g fat, 6 g carbs (5 g net carbs), 1 g fiber, 3 g protein.
