Sophia Roe Uses Tea When Making Rice

Chef, wellness advocate, and Pillow Talk Sessions cohost Sophia Roe loves to take advantage of every opportunity she has to cook. In this episode of Food Diaries, Roe talks about what a day of eats looks like in her life, from her morning juice to the unconventional way she cooks rice.

so far— My senses of urgency are now braided tightly with anxiety, and agitation; loose strands of complacency like split ends beg to be cut, no scissors in sight. What I know of time, is cracked in three directions. There is before #covid_19, during #covid_19, and after..All of us daydream for what “our after” will look like, while we shelter in our places, and cautiously hunt for toilet paper - - Oh but careful, not too fast..overflowing subway platforms, bruised faces, broken hearts, no masks, no symptoms, and ventilator shortages. “Can you test me please, I can’t breathe?” No, you are a life and a legacy lost in a loss of breath. We all cannot stay home. - - My days may look familiar to you..you tell me.. I am crying, and then I am not. I am hungry, and then I am not. I want to write, and then I do not. I want to exercise, and then..I do not. I find peace within the coziness of my mystery novel with the expected ending. I find myself keeled over in laughter at the foot of a Tiger King, but moments later..a tweet from Trump, and I am keeled over again, but without laughter this time - - It was only two weeks ago that you’d have heard me beg for more minutes. Time set aside for watercolor bloom tutorials, 1000 lunge challenges, miso soup 30 ways, chopping onions for fun, extra spanish lessons, finally take those wine studies classes, finally start those music lessons again. Now I am here, I have arrived to those extra minutes I always prayed for.. - - Please don’t misunderstand me, I am never without hope. I have confidence in many things, mostly in human compassion. While I have written of my anxieties above, please know the only alleviation I have found, is in the incessant, and continued showcase of human empathy that I have seen in these past two weeks - - I love you all so much, whether 6 feet away, 6 miles away, or more. I am not afraid to need you, so don’t be afraid to need me either? Okay?

Typically, Roe says she doesn't eat first thing in the morning. "Sometimes, there'll be, like, a rogue day where I wake up flipping starving, but that doesn't happen all the time," she says. "Normally, I'll have some green juice. If I do have a green juice, it's like a cucumber, celery, lettuce—you know, it's one of those general ones." She'll also occasionally go for just some fruit, like grapefruit or an apple.

Does she drink coffee or tea? "I am a tea drinker. Tea all the way," Roe reveals, adding that her favorite variety is Earl Grey with milk and stevia. "However, I like coffee when I'm traveling."

As the workday begins, Roe's appetite grows. Come 10 or 11 o'clock, she heads to her fridge.

"Any opportunity to test a recipe, I'm gonna take it," the chef says. "Say I've got some pickles, some tomatoes, some romaine lettuce. I'm just the queen of throwing some stuff together."

She adds that when making rice, she uses tea instead of water for boiling. "If you want to infuse flavor, that's a great way to do it," Roe says.
