Celery Soda: Give It a Go

Soda has become a dirty word. But that’s because you associate it with saccharine, calorie-loaded concoctions that have the charming side effect of staining your teeth.

This one does not. It’s green, both in color and in flavor, it’s only slightly sweet, and its bubbles wake up the tongue—they don’t claw at it.

Lest “celery” and “soda” be two words you don’t think go together, just look at the smile on our camera man’s face after sipping this drink. It’s a crowd-pleaser.

Celery Soda

Makes 2 drinks

2 bunches celery or 2 cups purchased celery juice
½ cup mint leaves plus a few extra for garnish
2 Tbsp. lemon juice 
2 Tbsp. superfine sugar
Sparkling water

If working with fresh celery, press it using a juicer to get the liquid. Otherwise, proceed with the recipe.

In a measuring cup, muddle the mint with lemon juice and sugar. Add celery juice and stir with a spoon.

Fill each glass with ice. Then strain celery juice mixture directly into the cups. Top with sparkling water into each. Garnish with a piece of mint or celery leaves if you want.
