Popeyes’ Head Of Culinary Innovation Shared The Secret To The Chain's Roasted Chicken Recipe

Restaurant chains everywhere are finding new ways for you to make their beloved recipes at home. Even Disney is letting us in on their culinary secrets so we can DIY the famous churros and Monte Cristo sandwich! And now, finally, we can try to make some of the best chicken in the game because the head of culinary innovation for Popeyes just shared one of their recipes.

The mastermind behind some of Popeyes' famous chicken Amy Alarcon gave some tips for how to make the best possible chicken in an interview with Forbes. She said when it comes to Popeyes' chicken, one of the reasons it's so good is because they take marinating the meat very seriously: "It’s all been seasoned and allowed to sit for at least 12 hours to add maximum flavor. I find myself doing this at home all the time too and chicken is the perfect canvas," she told the outlet.

To make the chicken flavorful, buttermilk, a well-stocked spice cabinet, and a selection of hot sauces are what Alarcon suggests. The hot sauces don't need to be super spicy, but they should add a flavor that's consistent all the way through.

Although Alarcon wasn't able to share the recipe for the Popeyes fried chicken (or The Sandwich!!) she did let Forbes in on how to make the chain's delicious roasted chicken thighs. To recreate it at home, you'll need skin-on, bone-in chicken thighs, buttermilk, hot sauce, creole spice, and olive oil pan spray.

Keep in mind, like Alarcon said, the chicken should marinate for at least 12 hours, so this recipe might be a two-day project. You've got time, though, right? Check out the full recipe at the bottom of her interview here.
