The Perfect Thanksgiving Potato Recipe, According to Katie Austin

With Thanksgiving mere days away, maybe you’ve already planned out your whole menu. But if, like us, you are still scrambling to come up with some delicious dishes to add to your table, fitness influencer Katie Austin has a recipe for you.

Potato dishes are an undeniable Thanksgiving staple, and her most recent recipe is the “perfect” side dish for your holiday meal, she said in a recent Instagram video. So, whether you think you need recipe inspo or not, consider trying these delicious garlic-y potatoes—your family will thank you.

Creamy Roasted Garlic Parmesan Chive Mashed Potatoes

Ingredients

  • 12 to 16 cloves of garlic

  • 2 tbsp. olive oil

  • 7 to 8 medium to large Idaho potatoes

  • 1/3 c. sour cream

  • 4 tbsp. butter

  • 1/2 tsp. pepper

  • 1/2 tbsp. salt

  • 2/3 c. Parmesan cheese

  • 1/4 c. half and half

  • 1/4 c. chives

Steps

  1. Place the garlic and olive oil in a cast iron skillet (or another oven-safe dish) and cover with aluminum foil. Bake at 375 degrees for 35 minutes.

  2. Peel and wash the potatoes. Chop into round quarters.

  3. Fill a large pot with water and place the chopped potatoes in the water.

  4. Bring to a boil and cook for about 17 minutes or until soft.

  5. Drain the water in a colander, then return the potatoes to the pot.

  6. Mix in the baked garlic, sour cream, butter, pepper, salt, cheese, half and half, and chives. Reserve some chives for topping.

  7. Using a potato masher, mash all of the ingredients together until you’ve achieved your desired consistency.

  8. On top, add more butter, olive oil and chives, to taste.
