No Fuss Lasagna Roll-Ups to Try If You're Looking For a Last Minute Dinner
RONI PROTER: I have some leftover bolognese, and there's nothing better than a slow-cooked tomato sauce the next day. I'm going to reinvent those leftovers by making individual lasagna roll-ups. I've got some ricotta. I'm going to do about half of this, about 16 ounces.
I'm going to be very generous with my Parmesan cheese. Some shredded mozzarella, that looks awesome. I'm going to add some frozen chopped spinach, some chopped parsley, some pepper. And I am not messing with chopping garlic for this because I need this done in a hurry, so I'm just going to use garlic salt. It's a great substitute. Give it a mix. That's it.
So I'm going to scoop a little bit of my bolognese down in the bottom of the pan. I'm going to take some of my filling, and I am going to spread it all the way down in a nice thin sheet. We don't want to overstuff it. Just a little bit of sauce. Give it a little roll.
Now we just have to do the rest of them. I'm going to put the rest of the sauce on top, last little bit of mozzarella and Parmesan. All right. Let's put it into the oven. It's going to be awesome.
You want to see a thing of beauty? Check it out. I'm going to take my kitchen shears and chop up some fresh basil, fresh parsley. It's like a perfect little portion for one. It's like your mom's best lasagna, but in a little roll-up.
