Making healthy snacks is easy with these chickpea hacks

Healthy snacks don’t need to be a lot of work. In this episode of ITK: Kitchen Hacks, we show you why you should opt for chickpeas to make healthy treats. These two simple hacks turn chickpeas into fun and easy snacks that are high in protein, fiber and healthy fats – not to mention delicious!

Chickpea Hack 1: Chickpea blondies

In a food processor, combine 2 cans of rinsed chickpeas, 1 cup of peanut butter, ⅔ cup of maple syrup, 2 teaspoons of vanilla extract, ½ teaspoon of baking powder, ½ teaspoon of baking soda and ½ teaspoon of salt. Process until smooth, then transfer the mixture to a bowl and fold in 1 cup of chocolate chips. Transfer to a 9×9 inch baking pan and sprinkle the top with more chocolate chips. Bake at 350 degrees for 35 to 40 minutes.

Chickpea Hack 2: Chickpea bark

Spread 1 ½ cups of chickpeas onto a baking sheet and drizzle with olive oil. Roast at 400 degrees for 40 minutes. Once cooked, add chickpeas into a bowl of 12 ounces of melted dark chocolate and stir to coat. Spread the chocolate chickpea mixture onto a baking sheet and sprinkle with Maldon salt. Let it chill and break into bite-sized pieces.
