Los Pollos Bros specializes in rotisserie chicken ‘seasoned to the bone’

Jose Perez grew up in a restaurant-owning family. Their place in Rancho Cucamonga is called Tasty Chicken.

His desire to serve hungry diners Mexican-style rotisserie chicken had him leave college and look for a suitable restaurant site.

The former Cousins Subs location on Hesperia Road became the first Los Pollos Bros restaurant in 2015. Los Pollos Bros has no period after the third word. “Bro” is a common form of address among his friends and, plural, part of the restaurant name that rolls off the tongue.

Fast-casual dining

The Victorville location opened in 2015. The chicken is "the best" because it has been “seasoned to the bone,” starting with a 24-hour marinade for the freshest young chickens available. Marinated chickens are then slow-cooked vertically on the rotisserie machine for two to three hours, so the meat is kept tender and juicy.

Try all three locations

Each Los Pollos Bros location is unique. The food is the same, of course, and all three locations offer beer — their slogan is “Eat Chicken Drink Beer Be Happy” — but only the Hesperia location has a full bar with superior “bar food” like boneless wings with a variety of sauces such as mango habanero, buffalo, garlic parmesan or BBQ served with ranch on the side; breaded green beans; breaded cheese curds; sidewinder fries; Bros Chicken Quesadilla; and sopes.

If you can’t decide, try the Appetizer Combo, which includes wings, beans, curds, and sidewinder fries for $15.99. Those fries are thicker than spiral fries, and therefore, better for dipping.

A Cinco de Mayo birthday

The Hesperia location will be one year old on May 5. That would be a good reason to stop in and order a special meal. Mother’s Day is also coming up, yet another reason to celebrate.

For upcoming business or family events, ask about Los Pollos Bros catering. Prices start at $8 per person. Most orders require 24 hours to process and there are three Party Meal options.

A comprehensive menu

Family recipes with a tweak here and there mark the Los Pollos Bros menu. It’s a simple menu that concentrates on quality while offering plenty of options. Soft or hard tacos, taquitos, nachos (added by popular demand), and wonderful salsas — plus the popular Elote Bowl with chicken rice and corn — are just a few of the choices.

Meal packages like the Quarter Meal (breast and wing or thigh and leg, one small side, one small drink, tortillas and salsa) for $11.99 or the Lunch and Dinner Meals — $13.49 and $14.49 respectively — are perfect for takeout. Family Meals or Jumbo Meals will serve a crowd. Details for all these meals are available online. Bowls, burritos, salads, nachos or taquitos options are also available.

Desserts include empanadas, cinnamon crispies, flan, rice pudding and Mexican cheesecake.

Friendly faces

Perez credits his restaurant’s fast growth to his employees. Daniela Lopez got her first job at the Apple Valley location, finished her business degree, and is now a part-owner there.

Another success story is the father-daughter team, Jose and Jennifer Flores at the Hesperia location. Perez noticed Jennifer Flores’s drive and ambition on her first day on the job. She and her father accepted the part-ownership invitation, and she is the manager.

Perez said his parents got the same start, and he knows helping others develop a good work ethic benefits everyone.

Perez also credits his wife Myra and his entire family for their support and guidance throughout this wonderful journey.

Big news on the horizon is that Los Pollos Bros will soon become a franchise opportunity for those who wish to give more people the chance to try this wonderful food.
