Lime Simple Syrup Recipe

Yields: Makes about 1 cup

Ingredients

  • 1 lime

  • 1 cup granulated sugar

  • 1 cup water

Directions

  1. Using a vegetable peeler, remove peel from lime in long strips. Remove any remaining bitter white pith from peels. Reserve lime segments for another use. Combine lime peel strips, sugar, and water in a small saucepan. Bring to a boil over medium-high, stirring constantly until sugar dissolves. Remove from heat, and cool to room temperature, about 30 minutes. Pour through a fine wire-mesh strainer into an airtight container; discard solids. Store in refrigerator up to 2 weeks.
