Kate Middleton's Family Has the Best Approach to a Healthy Christmas Dinner

Those who follow special diets or suffer from food allergies face a unique challenge when the holiday season rolls around. Holiday meals aren't always diet-friendly—which is true even for those in the royal family. Carole Middleton, Kate Middleton's mother, recently adopted a vegan diet, according to a new report from British newspaper The Telegraph. Interestingly enough, she will host a few high-profile members of the British royal family for a formal Christmas dinner.

Prince William and Duchess Kate will be traveling to Berkshire, England, to the spend the holidays at the Middleton family estate, and they'll be joined by Prince Harry and Meghan Markle, People reports. With so many of the royals at one table, you can't help but wonder—what will they eat?

While both Kate and Meghan have previously experimented with vegan diets, Carole Middleton will take the time to make a spread inclusive of both traditional Christmas recipes and vegan alternatives.

“If I go to someone’s house for dinner, I’m not going to make a fuss,” Middleton told The Telegraph. “For Christmas, I’d probably have two options—very traditional and something vegan.”

At Cooking Light, we've previously said it's best practice for those dealing with dietary restrictions to actually bring their own meals to a holiday event—but we love that the Middletons, regardless of their varying diets, will make both traditional and plant-based recipes for everyone to enjoy at the table.

More on how the royal family stays in tip top shape:

While it's unclear which vegan dishes will actually make their way onto the royals' Christmas dinner plates, there are so many options to choose from. We know that one of Kate Middleton's favorite dishes is curry, so maybe Carole will opt for a classic butternut squash, cauliflower, and coconut curry? Markle loves rich pasta dishes, and almonds are one of her main diet staples. Perhaps they’ll combine two of her favorite foods and make this vegan spaghetti dressed in spinach-avocado sauce topped with slivered almonds.

It's easy to take the lead from the Middleton family and include more plant-based dishes in your holiday spread. There are so many ways to incorporate vegan recipes into your Christmas feast. You could easily make one of these 12 show-stopping vegan entreés, create a smorgasbord of vegan appetizers, or try one of these 11 delicious vegan riffs on classic Christmas desserts.

The Middleton family has discovered a solution for hosting a dinner that everyone can enjoy this holiday season. Taking the time to cook vegan dishes—in addition to traditional recipes—is a great way to enjoy a healthier dinner that’s also (quite literally) fit for a king.
