Jalapeño Hush Puppies Kick Your Super Bowl Party Up a Notch

Jalapeño Hush Puppies
Makes about 1 dozen

¾ cup cornmeal
1/3 cup all-purpose flour
1 teaspoon Old Bay
½ teaspoon salt
½ teaspoon baking powder
¼ teaspoon baking soda
1 egg
½ cup buttermilk
1 jalapeño, diced
¼ white onion, diced
Oil for frying

In a large bowl, mix dry ingredients. Add eggs and buttermilk, then stir in jalapeño and onion.

In a deep pot, fill with oil to a depth of at least 2 inches and heat to 350°F. Fry large tablespoon scoops of batter for about 4 to 5 minutes, flipping halfway. When they are a nice golden brown color, take them out and let drain a bit on a paper towel. Let cool slightly and serve warm.
