Back in the spring, people collectively freaked out over pesto eggs, a new take on having eggs for breakfast. The idea came courtesy of registered dietitian nutritionist Amy Wilichowski, who shared the recipe on TikTok.
Now, Wilichowski has a new delicious take on pesto eggs: the pesto egg breakfast burrito — and you can recreate it at home. Naturally, it all starts with pesto eggs.
AMY WILICHOWSKI: I've always put pesto on pretty much everything. I actually have been making my own pesto since college. So one day I was like, let's just put the pesto on first and then the eggs directly into the pesto. I filmed it and put it on TikTok, and the video absolutely blew up. I wasn't expecting it to, but people love pesto eggs.
The vibe on my social media is a little bit of everything. I've done a lot of charcuterie boards and how to's and food tutorials. It's a little bit of everything when it comes to food on my page. Today, we're going to be doing a little twist on my pesto eggs. I'm actually going to be making a pesto eggs breakfast burrito. Breakfast burritos are one of my favorite things.
I'm just going to crack these eggs right into my bowl. Salt, pepper, garlic powder. Whisk up the eggs. My rule of thumb is 1 tablespoon of pesto per egg. I know when to pour my eggs in once it starts to simmer. As soon as the egg starts to set, I'm going to start folding it toward the middle. Pepper, garlic powder, and then some salt.
Pesto for the base layer. And then on top of that, I'm going to smash some avocado. Salt, spinach, American cheese, crispy hash browns, some crispy bacon, and then we're going to top it off with the pesto eggs. Mayo is the perfect thing to spread on a breakfast burrito so it gets golden brown. Put it back in the same hot pan to re-heat it. Cut it in half and dig in.
That is incredible. And that's how you taste the trend.
