What foods do you rely on in a crisis? While we’ve been diving into our supply of ramen, frozen pizza, and granola bars, some people are actually taking this time of social distancing to treat themselves to the type of comfort food that actually nourishes your soul as well as your body. We’re talking about the Barefoot Contessa, Ina Garten, of course! She recently posted that, while she and husband Jeffrey are hunkering down at home for the time being, they’re not giving up when it comes to dining. Instead, they’re having breakfast for dinner, thanks to Garten’s Overnight Belgian Waffles recipe.

First off, we’ve got to say we loooove a breakfast recipe that we can make the night before. We always *want* a nice, cozy breakfast in the morning, but waking up early enough to make it usually means that we save those meals for the weekends.

Ina’s overnight Belgian waffle recipe is pretty simple. It relies on yeast as a leavener (with just a pinch of baking soda). After mixing the batter, you leave it overnight at room temperature so it can slightly ferment and the yeast can do its thing. As Ina would say, “How easy is that?”

In the morning, you mix eggs and baking soda into the batter, then make your waffles as usual. If you want to make your waffles for dinner, like Ina, there are two solutions we can think of. Either put your overnight batter in the fridge until dinner time (adding the eggs and baking soda before cooking) or mix up your batter early in the morning, then let it sit on the counter until dinner time.

Another solution? Make these waffles on the weekend when you have extra time on your hands, then freeze them. Frozen waffles are a dream to reheat in the toaster or oven, and that way you can have a few cozy homemade Belgian waffles any time you want.

Don’t forget to serve with plenty of butter, or, if you’re like Ina, with sliced bananas, toasted coconut, maple syrup, and crème fraîche. That certainly beats a meal of Corn Nuts and ramen!
